While I didn’t make this salad on Christmas I’m really wishing I had another serving of it now! Yes this may sound a little strange, I had my doubts as I was brainstorming the idea of this salad in my mind, but I’m telling you it is one of my new favorites! It has such exciting flavors that all blend so amazingly well together! We all know that cranberry and orange were made to go together but when you add in creamy avocados, salty feta cheese, crunchy toasted almonds and a slightly sweet poppy seed dressing incredible things just happen. Then of course I added grilled chicken because I wanted to make a meal out of this, plus I just love the flavor of any kind of orange chicken so I knew this salad needed it.
I typically am not a pie person.
I know, I know. Cast your judgements 🙂
Its just if I am going to indulge in a dessert, pie would not be my first choice…. that is unless this pie is making its appearance!

For the 4th of July this year, ALL of my mom’s extended family came into town. This rarely happens because we live in 4 different states and there is just so many of us. When this rare occurrence does happen, it is AMAZING! I just love my mom’s family. They are all so witty, smart and kind people. Another thing I love about my mom’s family… they are ALL incredible cooks! When we get together is is the perfect store of delicious food. We talk about the menus long after they happened because of how good they are. My mom will call me up and we talk menu for days before planning what “the people” will like the most. Lots of heart and thought goes into our food and it shows through.

Today I have a delicious drink especially for the grown-ups! Is there anything better this time of year when it’s cold, snowy or just plain miserable outside than to stay in by the fire with a hot cup of cocoa? And when you make hot chocolate in your slow cooker, it makes it so easy to just keep a nice pot of it simmering. In fact, I’d say the best way to make homemade hot chocolate is in your slow cooker just for that reason. It’s never going to get scorched, it will slowly come to a simmer and it will fill your house with the most delicious smells for hours.
The result is this amazingly delicious and tender pulled pork that you can use in probably a billion ways. But today we are going to use it for these crazy good nachos. Nachos that have homemade chips, homemade goat cheese sauce and little pomegranate arils on top!
