CAJUN CHICKEN ALFREDO PASTA

I was thinking it’s about time for another awesome 30-minute-meal post here on the blog! Sooooo…..I give you this super easy, super yummy Cajun Chicken Alfredo Pasta! Remember awhile back when I shared this Creamy Chicken and Asparagus Pasta recipe (which also happens to be a 30-minute-meal!)? Well, it was so well received that I just knew I had to make a spin off of it. And the great thing about these pasta dishes (besides how EASY they are) is that you can throw in any type of vegetables. I just use what I have on hand! This cajun dish would be particularly tasty with some bell peppers and onion. I love broccoli though, and that’s what I had on hand, and it was completely delicious!

CHILI LIME CHICKEN WITH CREAMY GARLIC PENNE PASTA

Pasta is my favorite comfort food. I could eat spaghetti any day, any time. So when summer comes, and I’m always coming up with new pasta dishes to serve with grilled chicken and fresh vegetables! This Chili Lime Chicken with Creamy Garlic Penne Pasta was one of my dinner experiments that I questioned about half way through, but it ended up being amazing! I loved it, kids loved it, and husband LOVED it. That’s what we call a winner folks! I love this dish with fresh garden tomatoes, and I’ll often throw in fresh spinach and grilled zucchini if I’ve got them on hand.

I’m obsessed with salad!!
It’s not that I’m trying to be healthy when I eat a salad, they just taste SO GOOD to me!! I mean, we all know that most salads come with a very UN-healthy salad dressing, which is usually my favorite part, but I love to try out new salad recipes and especially love it when they have a house dressing to go with it. I do like my ranch and Caesar dressings, but I LOVE a custom dressing that especially made for a salad, just like today’s creation.
This recipe is inspired by the Strawberry Harvest Salad at Zupa’s. Have you ever been there? They’re fairly new to Arizona, but they are similar to a Panera or Paradise Bakery and have soups, salads and sandwiches. They have so great options to order, but my favorite salad is this one. I had it last time I was in Arizona and knew I had to attempt a copycat recipe. It’s just too good not to. I’m happy to report that this salad tastes just like theirs, and I’m so glad I can still enjoy it’s delicious-ness being two states away. ?
