    • 2 cups flour, unbleached or all-purpose
    • 1 cup butter, very cold and cubed
    • ¾ cup walnuts, chopped
    • For the cream cheese layer:
    • 1 (8 oz) package cream cheese, softened to room temperature
    • 1 cup confectioners sugar
    • 1 cup non-dairy lite topping
    • For the chocolate pudding layer:
    • 2 (3.9 oz) packages instant chocolate pudding
    • 3½ cups milk
    • For the topping:
    • 1 cup non-dairy lite topping
    • ¾ cup walnuts, chopped
  1. Preheat oven to 350 degrees F.
  2. For the crust: Put the flour and the cubed butter in a food processor and pulse until fine crumbs. Add ¾ cup walnuts and pulse a few times but just until the nuts are chopped and blended in. Pour the crust mixture in to a 9″ x 13″ pan and evenly press mixture down firmly. Bake 20 minutes in a preheated 350 degrees F oven. Remove from oven and cool completely.
  3. For the cream cheese layer: With a mixer on low, blend the room temperature cream cheese and confectioners sugar together until smooth, fold in one (1) cup non-dairy lite topping. Spread over cooled crust.
  4. For the pudding layer: In a large bowl and with a mixer on low, blend the milk and instant chocolate pudding mixes for 2 minutes, scraping the bowl once or twice. Spread over the cream cheese layer. *See notes below for spreading tip.
  5. For the topping: Take the remainder of the eight (8) oz container of non-dairy lite topping and smooth over the chocolate pudding layer. *See notes below for smoothing tip. Chop ¾ cup walnuts using a food chopper and sprinkle evenly over the top.
  6. Chill in the fridge for 15 – 30 minutes to set.
