Lemon Zucchini Muffins

Ingredients
  • 1 3/4 cup flour
  • 1/2 cup sugar
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 2 cups shredded zucchini
  • 1/2 cup oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 2 tsp lemon zest
  • 2 tbsp sugar
  • 1 tbsp lemon juice
Instructions
  1. Preheat oven to 350 degrees and line muffin tray with liners.

  2. Combine the flour, sugar, salt, baking soda, baking powder, and cinnamon in a medium bowl.

  3. Add in the zucchini, oil, eggs, vanilla, lemon juice, and zest.

  4. Stir until just combined.

  5. Scoop batter into lined muffin cups, about 3/4 full.

  6. Place muffin tray in preheated oven and bake for about 20 minutes.

  7. While muffins are baking, combine the sugar and lemon juice in small bowl. Microwave mixture for about 25 seconds.

  8. Once muffins are done, remove from oven and allow to cool.

  9. Drizzle glaze over tops of muffins and serve! Enjoy!
