Coconut Brunch Bread

You’ll Need (for the bread):

4 extra large eggs.
2 cups of sugar.
1 cup of vegetable oil.
2 tsps of coconut flavoring.
3 cups of flour.
½ tsp of baking soda.
½ tsp of baking powder;
½ tsp of salt.
1 cup of buttermilk.
1 cup of flaked coconut.
1 cup of chopped walnuts.

You’ll Need (for the topping):

1 cup of sugar.
½ cup of water.
2 tbsps of butter.
1 tsp of coconut flavoring.

½ cup of water.
2 tbsps of butter.
1 tsp of coconut flavoring.

How to:

 

Preheat the oven to 325° and grease and flour a 10 inch bundt pan.
In a large bowl, beat the eggs then add in the sugar, oil and coconut flavoring and mix until well blended.
In a separate bowl, mix together the flour, soda, powder and salt then add to the egg mixture alternating with buttermilk. Add in flaked coconut and walnuts.
Pour the batter in the bundt pan and bake for 1 ½ hours.
Once the cake is baked, in a saucepan, mix together the sugar, water and butter, bring to a boil then simmer for 5 minutes.
Turn off the heat and add 1 tsp of coconut flavoring.
Pour the hot mixture over the warm bread and let stand for 4 hours before removing from the pan.
