BANANA OATMEAL PANCAKES

INGREDIENTS

  • 1 1/3 cup flour
  • 3/4 cup old-fashioned oats
  • 1 tbsp sugar
  • 2 tbsp baking powder
  • 1/2 tsp cinnamon
  • 1 egg
  • 1 1/3 cup milk
  • 1 cup bananas mashed
  • 2 tbsp vegetable oil
  • 1 tbsp butter
  • berries optional topping
  • bananas optional topping

INSTRUCTIONS

    1. Combine flour, oats, sugar, baking powder and cinnamon in a large bowl.

    2. In another bowl, mix the egg, milk, banana and oil. Add to dry ingredients and mix until just combined. Let batter rest for at least 5 minutes.

  1. Melt butter on griddle and pour batter in 1/4 cups onto hot griddle. When there are bubbles on top, flip over and cook until golden brown.
